Hail Caesar!!

Great salads abound in the culinary world but it is the Caesar, appropriately, that has conquered the world, popping up on menus from Australia to Abu Dhabi and of course here at Tapas del Mundo Restaurant in Nayarit, Mexico.

In 1924 an Italian restaurateur in Tijuana, Mexico, César Cardini, created a novel dish out of garlicky croutons, grated Parmesan cheese, and a punchy dressing of olive oil, lemon, coddled egg and Worcestershire sauce, all spread lavishly on canoe-shaped romaine lettuce leaves that guests, reputed to be hungry Hollywood stars coming down in the wee hours of the morning to do lord knows what, ate with their fingers. This salad was not only dinner but theater also, as the salad was made and tossed in a great tableside show.

Newfangled versions show up every day but at Tapas del Mundo the Caesar salad is still done traditionally with old-fashioned panache, handcrafted before your eyes, tossed with fresh hot croutons.
